Homemade Coconut Roti
- 1/2 pounds, 7/8 ounces, weight Desiccated Coconut
- 2 Tablespoons Chili Powder
- 1/2 teaspoons Salt To Taste
- 1 teaspoon Pepper
- 1 Tablespoon Curry Leaves Or Coriander Leaves
- 3/4 pounds, 2-1/8 ounces, weight Plain Flour
- 1 Tablespoon Green Chili, Cut Into Small Slices
- 1 whole Onion, Peeled And Chopped
- 1/4 cups Water (plus More If Needed)
- Combine all the ingredients, mix well, and add enough water to make a soft dough (not sticky). Let the dough rest in the bowl 15 minutes.
- Shape it into balls about 2 inches in diameter. Then flatten each ball with a greased plate, as thick as desired.
- Cook in a hot frying pan, very lightly greased with oil. Keep turning on both sides until roti is cooked (light brown).
- Serve hot with fish or curry of choice, banana or your favorite fruit.
