Banana Bread With Pecans And Golden Flax
- 1/2 cups Whole Wheat Flour
- 3/4 cups All-purpose Flour
- 3/4 teaspoons Salt
- 1/4 cups Ground Golden Flaxseed (if You Are Grinding From Whole Seesds You'll Need Roughly Two Heaping Tablespoons Whole Seeds)
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1 whole Egg
- 1 whole Egg White
- 1/2 cups Golden Brown Sugar
- 1-1/2 teaspoon Vanilla Bean Paste
- 2 Very Ripe Bananas, Peeled And Mashed
- 2 Tablespoons Melted Butter Plus More For Pan
- 1/2 cups Pecans, Chopped
- 1. Preheat oven to 350 F. Grease a 9x5x3-inch loaf pan with butter; set aside. Whisk whole wheat flour, all-purpose flour, salt, flax, baking powder and baking soda in a medium bowl; set aside.
- 2. Put egg and egg white into the bowl of an electric mixer. Mix on low until well combined, about two minutes. Add brown sugar, vanilla, bananas and melted butter, and mix until combined. Add flour mixture, and mix on low speed until batter forms. Stir in pecans.
- 3. Pour batter into pan and bake for 35 minutes or until a cake tester inserted into the center of the loaf comes out clean. Remove pan from oven and set on a wire rack to allow bread to slightly cool. Remove bread from pan and cool completely on rack.
