Roasted Banana Bars
- FOR THE ROASTED BANANAS:
- 3 whole Ripe Bananas
- 1/3 cups Brown Sugar
- 1 Tablespoon Butter

- FOR THE BARS:
- 2 cups All-purpose Flour
- 1/4 cups Cornstarch
- 3/4 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1-1/4 cup Sugar
- 1/2 cups Butter
- 2 whole Eggs
- 1/4 cups Nonfat Buttermilk
- 1 teaspoon Vanilla Extract

- FOR THE FROSTING:
- 1/4 cups Butter
- 2 cups Powdered Sugar
- 1/3 cups Reduced Fat Cream Cheese
- 1 teaspoon Vanilla Extract
- 1/4 cups Chopped Pecans, To Sprinkle On Top
- Preheat oven to 400u0b0F.
- Combine the ingredients for the roasted bananas in a bowl. Once mixed, transfer to a baking dish. Bake at 400u0b0F for 35 minutes, stirring after 17 minutes. Cool and set aside.
- For the bars, combine flour, corn starch, soda, and baking powder in a medium bowl. Combine sugar and butter into another bowl. Add eggs and stir until creamy.
- Combine banana mixture, buttermilk, and vanilla in another medium bowl. Add the banana mixture and sugar mixture into the flour mix. Stir well.
- Pour batter into a 9 by 13 pan and bake for 20 minutes. Let cool.
- For the frosting, melt the butter in a small saucepan over medium heat; cook 4 minutes or until lightly browned.
- In a medium bowl, stir sugar, cream cheese, vanilla and cooled browned butter. Stir until smooth.
- Once bars are completely cooled, frost and sprinkle with pecans.
