Cilantro Lime Taco Soup Recipe
- 1 whole Onion, Chopped
- 3 cloves Garlic, Chopped
- 1 can (10 Oz. Can) Ro*tel Tomatoes
- 1 can (15 0z. Can) Diced Tomatoes
- 1 can (16 Oz. Can) Fat-free Refried Beans
- 1 can (15 Oz. Can) Black Beans
- 1 can (15 Oz. Can) White Beans (Navy Beans)
- 1 can (15 Oz. Can) Vegetable Or Chicken Broth
- 2 cups Whole Kernel Corn
- 1 package (1 Oz. Packet) Taco Seasoning Mix
- 1/2 cans (12 Oz. Can) Lime Beer
- 2 Tablespoons Lime Juice, Plus An Extra Squeeze For The Sour Cream
- 3 Tablespoons Chopped Cilantro, Divided
- 1/3 cups Fat Free Sour Cream
- Sea Salt And Fresh Ground Pepper, To Taste
- Grated Mexican Cheese, To Serve
- Fritos, To Serve
- Saute onions in a large pot. Add chopped garlic; let it soften but not burn. Next, add Rotel, diced tomatoes, and the refried beans and stir together. Then add the beans, broth, and corn; do not drain the beans but please make sure to drain the corn if used from a can.
- Add the taco mix, beer and lime juice. Add 2 tablespoons cilantro. Cover and simmer for an hour.
- For the garnish, mix the sour cream with the remaining 1 tablespoon cilantro and a squeeze of lime juice and a dash or sea salt.
- When serving, top with cheese and Fritos.
