Chocolate Peanut Butter Cookies

  1. Preheat the oven to 350 degrees. Prepare 1/2 sheet pans with Silpats or parchment paper.
  2. In the bowl of a standing mixer, cream together the soft butter and the sugars until fluffy. Add the eggs and the vanilla.
  3. In a separate bowl, combine the flour, cocoa powder, baking soda and salt.
  4. Add the dry ingredients to the mixer and stir well to combine. Add the Reese's Pieces and mix until just combined.
  5. Drop by the large spoonful (I used an ice cream scoop) onto the baking sheets. (I baked about 8 at a time). Bake the cookies 10-12 minutes (do NOT over bake, they are better on the less-done side) and then place on a rack to cool.
