Chocolate Peanut Butter Cookies
- 1 cup Butter, Softened
- 1 cup Brown Sugar
- 1 cup White Sugar
- 2 whole Eggs
- 2 teaspoons Vanilla
- 2 cups Flour
- 3/4 cups Cocoa Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 18 ounces, weight Reese's Pieces
- Preheat the oven to 350 degrees. Prepare 1/2 sheet pans with Silpats or parchment paper.
- In the bowl of a standing mixer, cream together the soft butter and the sugars until fluffy. Add the eggs and the vanilla.
- In a separate bowl, combine the flour, cocoa powder, baking soda and salt.
- Add the dry ingredients to the mixer and stir well to combine. Add the Reese's Pieces and mix until just combined.
- Drop by the large spoonful (I used an ice cream scoop) onto the baking sheets. (I baked about 8 at a time). Bake the cookies 10-12 minutes (do NOT over bake, they are better on the less-done side) and then place on a rack to cool.
