Low-Fat Zucchini Brownies
- 1/2 cups Applesauce
- 2 whole Ripe Bananas, Peeled And Mashed
- 1-1/2 cup Sugar
- 2 teaspoons Vanilla Extract
- 1/2 cups Cocoa Powder
- 1 teaspoon Cinnamon
- 1-1/2 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 2 cups Shredded Zucchini (peel First)
- 2 cups Whole Wheat Flour
- 1/2 cups Almonds, Chopped (optional)
- 1/4 cups White Chocolate Chips
- 1/4 cups Semi-Sweet Chocolate Chips
- Powdered Sugar (optional; For Presentation)
- 1. Preheat oven to 350 F and grease a 9x13 baking pan.
- 2. In a large bowl mix applesauce, bananas and sugar together.
- 3. Add vanilla, cocoa powder and cinnamon, mix well.
- 4. Mix in baking soda, salt and zucchini. Then stir in flour.
- 5. Fold in nuts (if using) and chocolate chips. Pour the batter into the prepared pan and smooth the top.
- 6. Bake for 25-30 minutes, or until a toothpick comes out mostly clean (you don't want them dry). Then remove the pan from the oven.
- 7. Let the brownies cool for 10-20 minutes, then slice into squares. Sprinkle with powdered sugar for a pretty plate.
