Turkey And Sausage Jambalaya
- 2 lb. turkey breast, chopped cutlets
- 1 lb. smoked sausage, chopped
- 1 1/2 c. onion, chopped
- 1 1/2 c. celery, chopped
- 1 1/2 c. bell peppers, chopped
- 1/2 tsp. Tabasco sauce
- 1 (16 oz.) can tomatoes
- 3 c. chicken stock or water
- 2 1/2 sticks margarine
- 2 bay leaves
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. red pepper
- 1/4 tsp. black pepper
- 2 c. converted rice
- In 1/2 stick margarine, cook turkey and sausage until done. Set aside.
- In large stock pot cook in 2 sticks margarine and saute vegetables until clear.
- Add tomatoes, Tabasco sauce, seasonings and chicken stock.
- Bring to boil.
- Add rice and bring back to a boil.
- Reduce heat and simmer over low heat 15 minutes or until most of liquid is gone.
- Serve with your favorite cornbread and collard greens.
