Broccoli Chicken Casserole
- 2 cans cream of chicken soup
- 2 small pkg. frozen broccoli or 1 (24 oz.) pkg.
- 6 c. chicken, cooked and diced
- 1 c. milk
- 1 tsp. lemon juice
- 1 c. mayonnaise
- 1 c. shredded sharp Cheddar cheese
- 1 c. corn flake crumbs
- 2 tsp. oleo
- 1/2 tsp. curry powder
- Butter a 13 x 9-inch pan.
- Cook broccoli and any other vegetables you want to use.
- Arrange on bottom of cooking pan; put chicken on top of broccoli.
- Mix together soup, milk, lemon juice, mayonnaise and curry powder and pour over vegetables and chicken. Put cheese on top of soup mixture.
- Melt oleo and mix with corn flake crumbs; sprinkle on top.
- Bake in a 350u0b0 oven for 40 minutes or until lightly browned.
- (You can use other vegetables, but cut down on chicken and have vegetables cover bottom of pan.)
