Cranberry Struesel Muffins
- FOR THE STREUSEL:
- 1/2 cups All-purpose Flour
- 1/2 cups Brown Sugar
- 1/2 cups Large Flake Oats
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 1/4 cups Butter
- FOR THE MUFFINS:
- 2 cups All-purpose Flour
- 1 cup Packed Brown Sugar
- 1 teaspoon Baking Soda
- 1/2 teaspoons Table Salt
- 2 whole Eggs
- 1 cup Buttermilk
- 1/4 cups Melted Butter
- 2 teaspoons Vanilla
- 1/2 teaspoons Lemon Rind, Finely Grated
- 1 cup Cranberries
- Preheat oven to 375 F.
- In a bowl add streusel ingredients. Mix together until crumbly and then set aside.
- In a separate bowl, mix together dry ingredients for the muffins (flour, sugar, baking soda, salt). In another bowl (geesh, there's a lot of dirty bowls here) mix the wet ingredients in the order listed: eggs, buttermilk, melted butter, vanilla and lemon zest (use a rasp).
- Mix the wet with the dry (not too much) and sprinkle the cranberries on top. Mix all together until just moistened. don't overdo it!
- Spoon batter into a paper-lined 12-count standard size muffin tin and top with streusel. Oh ya! Put it in the oven and bake for 25 minutes, and then they're done!
