Refreshing, Easy, Delicious Couscous Salad
- 1 cup Whole Wheat Couscous
- 1 cup Water
- 1 Tablespoon Olive Oil
- 1 dash Sea Salt
- 1 dash Fresh Ground Pepper
- 1 whole Cucumber, Peeled And Sliced In Half Circles
- 1/2 pints Cherry Tomatoes, Halved
- 1/4 cups Fresh Parsley, Chopped
- 1/2 cups Crumbled Feta
- 3/4 cups Shelled Edamame
- 1/4 cups Light Champagne Vinaigrette
- 2 cups Wild Arugula (or Mixed Greens)
- To prepare couscous, combine with couscous, water, olive oil and salt and pepper in a microwave safe dish. Mix well and heat on high for 3 1/2 minutes. Fluff with a fork and put into the refrigerator to cool.
- Once at room temperature or cooler, mix with the remaining ingredients, except arugula. When ready to serve (immediately or up to 48 hours later), top arugula with couscous and enjoy!
- Note: for an alternate dressing, you can use 2 tablespoons olive oil and the juice of one lemon plus salt and pepper to taste.
