Parmesan Fried Zucchini
- 4 whole Small Or 2 Large Zucchini
- 4 Tablespoons Olive Or Canola Oil
- 2 Tablespoons Flour
- 2 cloves Garlic
- 2 Tablespoons Parmesan Cheese
- Salt And Pepper, to taste
- Begin by cutting your zucchini into rounds about 1/4 to 1/2 inch thick, then cut the rounds in half. Put zucchini in a bowl lined with a paper towel and sprinkle with some salt. Leave for 10 minutes, then pat excess water off with a paper towel.
- Heat half of the oil in a frying pan over medium to high heat. While oil is heating sprinkle zucchini with flour, season with pepper and toss to coat. Slice garlic into thin slices. When oil is hot add half the zucchini and half the garlic, let brown on first side for 2-3 minutes, then flip and brown on second side. Remove with spoon to a plate lined with paper towel to remove excess oil. Add extra oil to the pan if needed and repeat frying with remaining zucchini and garlic. I find it best to do this in batches so the zucchini cooks quickly and stays crisp.
- To serve, check seasonings and adjust if needed, and sprinkle some grated Parmesan on top for added flavor. Eat immediately!
