Spinach Lasagna
- 1 jar spaghetti sauce
- lasagna noodles (6 to 8), cooked and drained
- 2 beaten eggs
- 1 tsp. basil
- 1/2 tsp. red pepper flakes
- 4 oz. shredded Cheddar cheese
- 4 oz. Mozzarella cheese, shredded
- Parmesan cheese, grated
- 1 thawed and well drained (10 oz.) pkg. frozen spinach
- 1 (16 oz.) Ricotta cheese
- Mix eggs, spinach, Ricotta cheese and spices together.
- Spray bottom of 9-inch square baking dish with Pam.
- Place 1 layer of lasagna noodles and spread with 1/2 of spinach mix.
- Pour a thin layer of sauce to cover.
- Sprinkle with 1/2 of Cheddar and Mozzarella cheeses and some Parmesan cheese.
- Repeat layers, cover with foil and bake at 350u0b0 for 30 minutes.
- Remove foil and bake an additional 15 minutes.
- Allow to cool 5 minutes before cutting and serving.
