Red Quinoa Salad With Citrus-Curry Dressing
- 2 cups Cooked Red Quinoa (cooked According To Package Directions)
- 1/4 cups Thinly Sliced Green Onions
- 1/2 cups Diced Red Apple (gala Works Well Here)
- 1/2 cups Diced Celery
- 1/2 cups Diced Red Pepper
- 1/4 cups Golden Raisins
- 1/2 cups Sliced Raw Almonds
- 2/3 cups Citrus Juice (Mix Of Grapefruit, Orange And Lemon)
- 1/3 cups Extra Virgin Olive Oil
- 1 Tablespoon Pure Maple Syrup
- 1/2 teaspoons Cinnamon
- 1-1/2 teaspoon Curry Powder (or Adjust To Taste)
- 1 pinch Kosher Salt
- Combine quinoa, green onions, apple, celery, red pepper, golden raisins and almonds in a large bowl. Add 1/2 cup of dressing and mix until combined. Serve immediately.
- For the dressing, combine juice, extra-virgin olive oil, maple syrup, cinnamon, curry powder and kosher salt in a jar with a lid; shake well. Note: You will only use 1/2 cup dressing for this recipe; reserve the remainder for another use.
