Fat-Free Muffins
- 1 c. oatmeal
- 1 1/4 c. wheat bran
- 1/4 c. brown sugar or equal amount of sweetener
- 2 egg whites
- 2 Tbsp. vegetable oil
- 1/2 c. nuts, chopped
- 1 Tbsp. cinnamon
- 1/2 c. raisins or dried fruit
- 1 apple (with peeling), chopped
- 1 1/4 c. skim milk
- Mix together oatmeal, bran, baking powder, cinnamon and sweetener with a fork.
- Add
- to
- this
- mixture the egg whites, milk and vegetable oil
- which
- hasteen
- mixed together.
- Mix until moist.
- Add remaining ingredients and mix with a fork or spoon.
- Spoon into muffintan
- which
- has
- been
- lined
- with Baker's paper cup liners.
- Bake at 425u0b0 for 20 minutes.
- Store in tightly covered container
- in
- freezer or refrigerator.
- No cholesterol, no fat and
- low
