Raw Beet Daikon Radish Soup
- 4 whole Beets
- 1 whole Cucumber
- 1 whole Daikon Radish
- 5 Tablespoons Olive Oil
- 4 Tablespoons Raw Apple Cider Vinegar
- 1 cup Filtered Water
- 3 cloves Garlic
- 1 Thai Chili, Stem And Seeds Removed
- 1 teaspoon Minced Fresh Ginger
- 1 pinch Smoked Serrano Sea Salt Plus More For Garnish
- Optional Garnishes, See Note
- Wash the beets, cucumber and radish. Peel if not using organic. Quarter the beets and slice the radish and cucumber into 1-2 inch cubes. Add the vegetables and all remaining ingredients into a high-powered blender and blend until smooth (1-2 minutes).
- This soup is wonderful alone, but even better with garnishes. I topped mine off with a dollop of cultured sour cream, spicy pickles and a pinch of smoked serrano sea salt to give it a little more heat.
