Raw Beet Daikon Radish Soup

  1. Wash the beets, cucumber and radish. Peel if not using organic. Quarter the beets and slice the radish and cucumber into 1-2 inch cubes. Add the vegetables and all remaining ingredients into a high-powered blender and blend until smooth (1-2 minutes).
  2. This soup is wonderful alone, but even better with garnishes. I topped mine off with a dollop of cultured sour cream, spicy pickles and a pinch of smoked serrano sea salt to give it a little more heat.
