Quinoa And Pineapple Salsa

  1. Place quinoa in a pot and add 2 cups water. Bring to a boil, cover and simmer for 10-15 minutes, stirring occasionally. Cook until all the water in evaporated.
  2. Meanwhile in a bowl, add all of the pineapple salsa ingredients and carefully mix together. If you aren't going to serve it warm, refrigerate until ready to use. Use within 3 days.
  3. Mix cooked quinoa with pineapple salsa when ready to serve. Serve dish warm or cold.
  4. Makes approximately 5 1/2 cups. Serving size just shy of one cup
