Raspberry-Pom Beet Salad (Pomegranate Dressing)

  1. 1. Peel, wash and grate beet; set aside. Grate apple with skins on for the extra fiber and nutrients.
  2. 2. In a medium bowl, add grated beets, grated apples, shredded red cabbage, raspberries, sunflower seeds, pomegranate seeds, and dressing; toss and mix well. Serve.
  3. Note: to prepare dressing, simply whisk dressing ingredients together.
