Raspberry-Pom Beet Salad (Pomegranate Dressing)
- 1 cup Grated Apples (golden Delicious)
- 3/4 cups Grated Red Fresh Beet
- 1/4 cups Purple Shredded Cabbage
- 1/2 cups Raspberries
- 1/4 cups Sunflower Seeds
- 1/4 cups Pomegranate Seeds (dried Ones Are Good Too)

- FOR THE DRESSING:
- 2 Tablespoons POM Pomegranate Juice
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 Tablespoons Apple Cider Vinegar
- 1/2 Tablespoons Honey Or Favorite Sweetener
- Salt And Pepper, to taste
- 1. Peel, wash and grate beet; set aside. Grate apple with skins on for the extra fiber and nutrients.
- 2. In a medium bowl, add grated beets, grated apples, shredded red cabbage, raspberries, sunflower seeds, pomegranate seeds, and dressing; toss and mix well. Serve.
- Note: to prepare dressing, simply whisk dressing ingredients together.
