Raspberry Truffle Brownies

  1. Preheat oven to 350 degrees and grease a 9x13 pan with cooking spray.
  2. Prepare brownie mix (you'll typically need water, eggs, and oil, as directed in mix package). Bake brownies according to package directions. Let cool.
  3. Melt the semi-sweet chocolate chips and let cool slightly.
  4. In a mixing bowl, beat the cream cheese until fluffy; add the powdered sugar, almond extract, and raspberry jam. Mix well. Stir in the melted chocolate and mix until combined.
  5. Spread the filling evenly over the cooled brownies.
  6. For the glaze, melt the chocolate chips and shortening in the microwave; mix well.
  7. Drizzle the glaze over the brownies with a fork. Chill the brownies before serving. Garnish with a fresh raspberry on top of each slice.
