Bread And Butter Pickles

  1. Combine cucumber, onion and garlic in large bowl.
  2. Sprinkle with salt; cover with ice cubes.
  3. Let stand overnight.
  4. Drain well. Combine remaining ingredients except liquid artificial sweetener in a 4-quart pan; add cucumber mixture.
  5. Bring to a boil.
  6. Cover and boil gently for two minutes.
  7. Stir in liquid artificial sweetener. Remove garlic clove.
  8. Spoon into sterile jars.
  9. Seal.
  10. Yield:
  11. 5 cups.
  12. Carbohydrate 6 g, protein 1 g, fat 0 g, calories 28.
  13. One serving = 1/2 vegetable exchange.
