Cowboy Cookies
- 2 sticks butter (room temperature)
- 3/4 c. dark brown sugar
- 3/4 c. white sugar
- 2 eggs
- 1 Tbsp. vanilla extract
- 1 c. rolled oats (Quaker old-fashioned or other)
- 2 c. flour
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 1/2 c. ground (yes ground) pecans
- 2 heaping c. chocolate chips (Nestle semi-sweet is my favorite)
- Cream butter, brown sugar and white sugar.
- Cream in eggs and vanilla extract.
- Mix in oats and flour (in which you've
- combined baking soda and salt).
- Mix in pecans and chocolate chips.
- Ball out the batter in about golf ball size balls.
- Place on air-cushion cookie sheets, then half-flatten with fork.
- Bake in preheated oven of 375u0b0 until just done in center and just browning on edges, about 15 minutes, check often.
