Orange Marmalade Cranberry Bread
- 1/2 cups Nonfat Greek Yogurt
- 1 whole Banana, Peeled And Mashed
- 1/2 cups Brown Sugar
- 2 whole Eggs
- 1-1/2 cup Orange Marmalade (I Used Trader Joe's)
- 2-1/2 cups Whole Wheat Pastry Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Sea Salt
- 1/2 cups Orange Juice
- 1/2 cups Chopped Walnuts
- 1/2 cups Dried Cranberries
- 1/2 cups White Chocolate Chips
- Preheat oven to 350 F. Spray a 9 x 5 loaf dish with non-stick spray, or spray 3 mini loaf pans.
- In the bowl of a stand up mixer beat yogurt, banana, and brown sugar until combined. Add in eggs one at a time. Mix well. Fold in marmalade jam.
- In a separate bowl combine flour, baking powder, baking soda, and salt.
- Pour 1/2 of the dry ingredients into the wet mixture along with orange juice. Mix well, and fold in remaining dry ingredients.
- Lastly add in nuts and cranberries. Pour into prepared loaf pans. Sprinkle the top with white chocolate chips.
- Bake the standard size loaf for 1 hour or until a toothpick inserted comes out clean. Bake mini loaves for about 25 minutes or until a tester comes out clean.
- Once done, let the bread cool in pan(s) for 10 minutes then remove bread from pan to a cooling rack to finish cooling.
