Orange Marmalade Cranberry Bread

  1. Preheat oven to 350 F. Spray a 9 x 5 loaf dish with non-stick spray, or spray 3 mini loaf pans.
  2. In the bowl of a stand up mixer beat yogurt, banana, and brown sugar until combined. Add in eggs one at a time. Mix well. Fold in marmalade jam.
  3. In a separate bowl combine flour, baking powder, baking soda, and salt.
  4. Pour 1/2 of the dry ingredients into the wet mixture along with orange juice. Mix well, and fold in remaining dry ingredients.
  5. Lastly add in nuts and cranberries. Pour into prepared loaf pans. Sprinkle the top with white chocolate chips.
  6. Bake the standard size loaf for 1 hour or until a toothpick inserted comes out clean. Bake mini loaves for about 25 minutes or until a tester comes out clean.
  7. Once done, let the bread cool in pan(s) for 10 minutes then remove bread from pan to a cooling rack to finish cooling.
  8. Enjoy.
