Raisin Bran-Cranberry Muffins
- 3 cups Raisin Bran Cereal
- 1/2 cups Milk
- 1/3 cups Dried Cranberries
- 2 cups All-purpose Flour
- 4 teaspoons Baking Soda
- 2 teaspoons Cinnamon
- 1/2 teaspoons Salt
- 2 whole Eggs, Beaten
- 1/4 cups Oil
- 1/4 cups Applesauce
- 2/3 cups Brown Sugar, Packed
- Preheat oven to 400u0b0F.
- Combine cereal, milk and cranberries in a large bowl. Mash the ingredients a little and let stand 10 minutes.
- In a separate bowl mix flour, baking soda, cinnamon and salt.
- Add eggs, oil, applesauce and sugar into the cereal mixture. Stir well. Add flour mixture to the cereal mixture. Stir well.
- Line a 12-count muffin pan with paper wrappers and fill each to the top with batter. Bake at 400u0b0F for 22 minutes.
