Quinoa, Pomegranate And Spinach Salad
- FOR THE SALAD:
- 4 cups Baby Spinach
- 1/2 cups Cooked Quinoa
- 1/2 cups Pomegranate Seeds
- 1/4 cups Chopped Red Onion
- 1/2 cups Apple, Cored And Chopped
- 2 Tablespoons Blue Cheese Crumbles
- 1/4 cups Candied Pecans
- FOR THE DRESSING:
- 3/4 cups Olive Oil
- 1/4 cups Apple Cider Vinegar
- 1/4 cups Balsamic Vinegar
- 1/4 teaspoons Italian Seasoning
- 1 teaspoon Maple Syrup
- 1/2 teaspoons Salt
- 1/4 teaspoons Black Pepper
- In a medium bowl place spinach leaves, then top with quinoa, pomegranate, onions, apple and blue cheese. Add candied (or toasted) pecans (optional).
- Whisk olive oil, vinegar, balsamic, Italian seasoning, syrup, salt and pepper in a bowl to blend well. Drizzle dressing over salad and serve.
