Quinoa Produce Salad
- 1 cup Quinoa, Pre-rinsed Or Rinsed
- 2 cups Reduced Sodium Chicken Broth
- 2 cups Frozen Corn, Defrosted (can Definitely Use Fresh, If Available)
- 4 whole Green Onions, Chopped
- 2 cups Grape Tomatoes (multicolored Or Campari Are Great), Halved
- 6 leaves Basil, Thinly Sliced
- 2 Tablespoons Olive Oil
- 1 whole Lemon, Juiced
- Salt And Pepper, to taste
- Add the quinoa and chicken broth to a saucepan and bring to a boil. Reduce to a simmer, cover, and cook for 10-15 minutes or until the liquid has been absorbed and the quinoa is al dente. Allow to cool slightly.
- Place the cooked quinoa in a large bowl. Add the corn, green onions, tomatoes, and sliced basil. Stir with a spatula to combine. Pour in the olive oil and lemon juice and stir until evenly coated. Taste for seasoning and add salt and pepper.
