Quinoa Flour Zucchini Banana Bread

  1. Preheat your oven to 350u0b0F and lightly oil a bread loaf pan.
  2. Peel the bananas and place them in a mixing bowl. Mash the bananas using a fork. Add eggs, coconut milk, vanilla and mix thoroughly.
  3. Grate the whole zucchini. Add the grated zucchini and mix with the wet ingredients.
  4. Add the quinoa flour, baking powder, salt and cinnamon and mix well. Mix in chopped nuts. If you are adding honey or a different sweetener, do so now.
  5. Pour the batter into the loaf pan and bake for 45 minutes or until the bread tests clean. Serve bread with Greek yogurt, sliced fruit and lots and lots of coffee!
