Chickpea Chocolate Chip Cookies (Egg- And Flour-Less)

  1. Preheat your oven to 350u0b0F. Line a cookie sheet with parchment paper.
  2. Blend chickpeas in a blender until they have a paste-like texture (don't worry if some small chunks are left).
  3. In a large bowl combine blended chickpeas, peanut butter, sugar, vanilla and baking powder. Mash everything together using a big spoon until well combined.
  4. Once everything is well combined fold in dark and white chocolate chips.
  5. Place tablespoon-sized scoops of dough on the cookie sheet leaving an inch or two between each and bake for 30 minutes.
