Corn Relish
- 8 c. whole kernel corn
- 4 c. chopped celery
- 1 c. chopped onion
- 2 c. chopped green pepper
- 2 c. chopped sweet red pepper
- 2 c. vinegar
- 2 c. sugar
- 2 1/2 c. water
- 2 tsp. celery seed
- 2 Tbsp. salt
- 1/4 c. all-purpose wheat flour
- 2 Tbsp. dry mustard
- 1 tsp. turmeric
- Combine celery, both peppers and onions.
- Add vinegar, sugar, 2 cups water, celery seed and salt.
- Bring this mixture to a boil and simmer 5 to 6 minutes.
- Blend flour, dry mustard and turmeric in 1/2 cup cool water.
- Add this mixture and corn to the batch.
- Cook, with stirring, for 5 minutes.
- Pack into hot half-pint jars.
- Close and process for 20 minutes in boiling water.
- Cool and store in cool place.
