Light & Tasty Broccoli Pie
- 2 bunches (approximately 1 Lb. Per Bunch) Fresh Broccoli
- 1/4 cups Chopped Onion
- 1 cup Grated Medium Cheddar Cheese
- 3/4 cups Milk
- 2 whole Eggs
- 1/2 cups Bisquick Baking Mix
- 1/2 teaspoons Salt
- 1/8 teaspoons Black Pepper
- 1/8 teaspoons Garlic Powder
- Wash broccoli and pat dry. Cut broccoli bunches into flowerettes. Lightly grease the bottom of a 9-inch pie plate or 8x8 square baking dish. Spread broccoli over the bottom of the pan, layering if needed. Sprinkle with onion and then with cheese. Measure milk, eggs, biscuit mix, salt, pepper, and garlic powder into a blender. Blend until smooth. Pour over the top of the cheese. Bake in a 375-degree oven for 25-35 minutes. Pie will test done if you insert a knife and it comes out clean. Cut into wedges or squares and serve.
- I like to serve this broccoli pie with a green salad and garlic bread.
- Optional ingredient: chopped ham (if using ham, sprinkle it on top of the cheese, before adding wet ingredients).
