Maple Leaf Sandwich Cookies

  1. Preheat oven to 350 F.
  2. For the cookies:
  3. In the bowl of your stand mixer, cream together butter and sugars until combined. Add remaining cookie ingredients and mix until it becomes a dough.
  4. Roll out the cookie dough onto a floured counter top to about 1/4-inch thickness. Dip a maple leaf cookie cutter (see note below) into flour to prevent sticking and then use it to cut out maple leaf cookies. Place cookies onto a baking sheet that you've lined with parchment paper. You can re-roll the dough scraps to make additional cookies. Bake for about 13 minutes. Remove pan from the oven and allow cookies to cool before frosting.
  5. Note: When purchasing a maple leaf cutter, be sure that the leaf is the same on both sides so the cookies will match up when sandwiched together.
  6. For the frosting:
  7. Place all of the frosting ingredients into a bowl and use a mixer to combine it.
  8. Place a small amount of frosting on the back of one maple leaf cookie (frosting can be piped onto cookies or simply spread onto them). Match up and place the back of another maple leaf cookie onto the frosting to make a sandwich. Repeat with the remaining cookies and frosting.
