Ghost Strawberries
- 30 whole Strawberries
- 8 ounces, weight White Chocolate, Chopped
- 1 teaspoon Shortening
- 1/8 teaspoons Vanilla Extract
- 1/4 cups Miniature Semi-sweet Chocolate Chips
- Wash strawberries and gently pat with paper towels until completely dry. It's important that the strawberries are absolutely dry in order to dip them into the chocolate.
- In a microwave-safe bowl, melt white chocolate and shortening at 50% power; stir until smooth. I started the microwave at 3 minutes and stirred every 30 seconds until the chocolate was completely melted.
- Stir in the extract. Dip dry strawberries in chocolate mixture; place on a waxed paper-lined baking sheet. Immediately press chocolate chips into the coating for eyes. Freeze for 5 minutes.
- In a microwave-safe bowl, melt the remaining chocolate chips and stir until smooth. Dip a toothpick into the melted chocolate and draw a mouth on each face.
- Adorable and delicious! These little ghosts are only 54 calories each and 3 grams of fat each. Happy Halloween!
