Peppermint Crispie Treats

  1. Take a 9 x 9 inch glass pan, and spray with cooking spray. Set aside.
  2. In a pot of medium low heat, melt the butter. Once melted, add in the marshmallows and immediately and continuously stir the mixture until all marshmallows are melted and smooth. Add in the cereal and mix until evenly coated.
  3. Immediately pour mixture into prepared pan and using greased hands, spread the mixture evenly in the pan. Set aside to cool for 15-20 minutes.
  4. In the meantime, combine the chocolate, butter and milk into a microwave safe bowl. In 15-second intervals, melt the chocolate, stirring after each interval. When completely smooth, add in the peppermint extract.
  5. When the crispie treats are cool, cut into 1 1/2-inch squares. Dip each square into the chocolate mixture and sprinkle with the crushed candy cane pieces Repeat with all treats!
  6. Allow to set for 10 minutes and enjoy!
