Mint Oreo Marshmallow Bark

  1. Bring water in a double boiler to a simmer.
  2. Line a cookie sheet with parchment paper. (You can spray the cookie sheet with cooking spray to help keep the parchment paper in place.)
  3. Melt mint dark chocolate in the double boiler, stirring constantly.
  4. When mint dark chocolate has melted and is smooth, turn off heat and add chopped milk or dark chocolate. Stir until smooth and creamy.
  5. Add the 8 chopped Oreos and marshmallows and gently stir to combine.
  6. Pour chocolate mixture onto the parchment paper or spoon chocolate into circles onto the parchment paper. Press the remaining chopped Oreos into the bark and scatter a handful of marshmallows or sprinkles onto the bark. Place the cookie sheet in the refrigerator for 30 minutes to set.
  7. When bark has set, break into random-sized pieces. Store in an airtight container. Enjoy!
