Orange Chocolate Brownie Squares

  1. For the brownie base:
  2. Preheat oven to 350 F. Line an 8"x8" square pan with parchment paper, allowing two ends of the paper to hang over the sides of the pan (to use as a handle to remove the brownies when done). Set aside.
  3. In a small saucepan, melt butter and cocoa powder over low heat, stirring while it melts. Once melted remove pan from heat and set aside.
  4. In a medium bowl, whisk eggs until frothy. Add sugar, flour, and salt. Do not mix. Pour cocoa mixture over the top and stir until just combined. Do not over mix.
  5. Pour into the prepared pan and bake for 25 minutes or until edges begin to pull away from the sides of the pan. Remove pan from oven and cool on a wire rack.
  6. For the orange layer:
  7. In a medium sized bowl cream butter, 2 tablespoons milk, extract, and icing sugar until smooth. Add enough food coloring to make desired hue. Add orange zest. Add additional tablespoon of milk only if needed to make orange layer more spreadable. Spread evenly over the cooled brownie base.
  8. Melt chocolate chips in the microwave for 30 second intervals, stirring between each, until melted, and drizzle over orange layer.
  9. Chill in refrigerator for several hours to set completely. Remove brownies from pan using the paper 'handles' and cut into squares. I always use a pizza cutter and ruler to cut my squares evenly and cleanly.
