Mandarin And Marmalade Cookies
- 2 3/4 c. all-purpose flour
- 1 tsp. baking powder
- 1 c. salted butter, softened
- 1 c. white sugar
- 1 large egg
- 1/2 c. orange marmalade
- 1 (10 oz.) can mandarin oranges, drained and chopped
- Preheat oven to 300u0b0.
- In a medium bowl, combine flour and baking powder.
- Mix well with a wire whisk and set aside.
- In a large bowl, blend butter and sugar with an electric mixer to form a grainy paste.
- Add egg and orange marmalade and beat at medium speed until smooth.
- Add the flour mixture and the oranges and blend at low speed just until combined.
- Do not overmix.
- Drop by rounded tablespoonfuls onto ungreased baking sheets 1 1/2 inches apart.
- Bake for 24 to 25 minutes or until the bottoms of cookies begin to brown.
- Transfer with a spatula to a cool, flat surface.
