Potato Salad For Large Crowd(30 People Or More)
- 5 lb. Irish potatoes, with jackets on
- 6 boiled eggs, chopped
- 2 large onions, chopped well
- several stalks celery, chopped fine
- 1/2 jar chopped sweet pickles
- 1/2 c. sweet pickle juice
- 3 Tbsp. Deep South mayonnaise
- about 1 qt. mayonnaise
- 2 large bell peppers, chopped
- 1 large jar pimento, chopped
- 1 Tbsp. mustard
- salt and pepper to taste
- Cook potatoes; cool, peel and chop.
- Add eggs, bell peppers, onions, pimento, celery and pickles.
- Make sauce by mixing well the pickle juice, mustard and 3 tablespoons mayonnaise.
- Add about 1 quart mayonnaise, salt and pepper to the sauce.
- When potato mixture is cold, add sauce all at one time to mixture.
