Peanut Butter Apple Oatmeal Cookies

  1. 1. Preheat oven to 350 F. Line 2 cookie sheet with parchment paper or lightly spray them with non-stick cooking spray. Set aside.
  2. 2. In a large bowl using a mixer, cream together sugars and butter. Add eggs and vanilla. Beat until creamy. On low, stir in corn syrup and peanut butter until combined.
  3. 3. In a small bowl, whisk together flour, baking soda and salt. Slowly add dry ingredients into the wet ingredients, mixing until just combined.
  4. 4. Using a wooden spoon (or other sturdy utensil!), stir in oats and apples.
  5. 5. Drop the dough by 1/4 cupfuls onto the prepared baking sheets, leaving some space in between as they will spread. Bake for 11-13 minutes or until edges just start to turn golden brown. Do not over bake.
  6. 6. Remove baking sheets from the oven and allow cookies to cool for 3 minutes on cookie sheets before removing them to a wire rack to finish cooling.
  7. 7. Store in an airtight container.
