Snow Peas Oriental
- vegetable cooking spray
- 1 tsp. light sesame oil
- 1/2 lb. fresh snow peas pods, trimmed
- 3/4 c. diagonally sliced carrots
- 1/3 c. sliced water chestnuts
- 1/2 c. canned no salt added chicken broth (undiluted)
- 1 tsp. low sodium soy sauce
- 1 tsp. cornstarch
- Coat a nonstick skillet with cooking spray.
- Add oil and place over medium heat until hot.
- Add snow peas and carrots.
- Saute 2 minutes.
- Add water chestnuts and broth.
- Bring to a boil.
- Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
- Combine soy sauce and cornstarch.
- Stir until cornstarch dissolves; add to vegetable mixture.
- Cook over medium heat.
- Stir constantly until thickens.
- Serve immediately.
- Makes 4 servings.
