Snow Peas Oriental

  1. Coat a nonstick skillet with cooking spray.
  2. Add oil and place over medium heat until hot.
  3. Add snow peas and carrots.
  4. Saute 2 minutes.
  5. Add water chestnuts and broth.
  6. Bring to a boil.
  7. Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
  8. Combine soy sauce and cornstarch.
  9. Stir until cornstarch dissolves; add to vegetable mixture.
  10. Cook over medium heat.
  11. Stir constantly until thickens.
  12. Serve immediately.
  13. Makes 4 servings.
