Cheesecake-Stuffed Strawberries

  1. Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft. Whip together the cream cheese, vanilla, and sugar.
  2. In the center of each strawberry, using a sharp knife, make a hole, as deep as you can without going out the bottom. Once you have all of your berries hulled, spoon or pipe the filling into each hole. Set each one aside on a serving tray and continue with all of the berries and filling.
  3. Put the chopped almonds in a bowl. Put the graham crackers mixed with cinnamon in another bowl.
  4. Then, dip the cheesecake end of each strawberry into chopped almonds, or the graham cracker crumbs mixed with cinnamon making sure you completely cover the cheesecake filling with covering of your choice. Drizzle the melted chocolate over the berries as desired.
  5. Lay strawberries in a pretty serving dish. Chill, and serve
