Lasagna With Zucchini
- 16 oz. lasagna noodles
- 1 1/2 lb. Italian sausage
- 48 oz. (6 c.) spaghetti sauce
- 2 eggs
- 2 1/2 c. Ricotta cheese
- 3/4 c. Parmesan cheese
- 1 1/2 lb. Mozzarella cheese, thinly sliced
- 1 lb. zucchini, thinly sliced
- Cook lasagna noodles as directed. Drain.
- Brown sausage and rinse with water to remove excess fat. Mix eggs and Ricotta cheese. Spread 2 cups of spaghetti sauce over bottom of 11 x 16 x 2-inch lasagna pan. Top with layer of noodles. Layer zucchini slices over noodles and cover with 2 cups spaghetti sauce.
- Place layer of noodles over sauce and top with Ricotta cheese mixture and half of Parmesan and Mozzarella cheeses.
- Place a layer of noodles over Ricotta cheese.
- Top with sausage and 2 cups of spaghetti sauce.
- Top with remaining noodles and remaining Parmesan and Mozzarella cheeses.
- Bake at 350u0b0 for 1 hour.
