Chewy Cranberry Cookies
- 1 c. sugar
- 1/4 c. margarine, softened
- 1/4 c. frozen apple juice concentrate, thawed (undiluted)
- 2 egg whites
- 1 1/2 tsp. vanilla extract
- 1 1/2 c. all-purpose flour
- 1 c. quick cooking oats (uncooked)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 2 c. coarsely chopped cranberries
- 1/2 c. chopped walnuts
- vegetable cooking spray
- Cream sugar and margarine, beating at medium speed of an electric mixer until well blended.
- Add apple juice concentrate, egg whites and vanilla; beat well.
- Combine flour and next 4 ingredients; gradually add to creamed mixture, beating at slow speed to form a soft dough.
- Stir in cranberries and walnuts. Drop dough by level tablespoonfuls onto cookie sheets coated with cooking spray.
- Bake at 350u0b0 for 14 minutes or until lightly browned.
- Yield: 4 dozen cookies.
