Berry Coffeecake With White Chocolate
- 1/2 cups Butter, Room Temperature
- 2/3 cups White Sugar
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1/2 cups Buttermilk, Low Fat
- 1 cup Fresh Blueberries
- 1 cup Fresh Strawberries, Hulled And Chopped
- 1/2 cups White Chocolate Chips
- 1 Tablespoon Brown Sugar
- Preheat the oven to 350u0b0F. Coat a 9 inch baking pan with cooking spray. Set it aside.
- In a large bowl using a mixer, beat butter, white sugar, vanilla and egg until fluffy.
- In a medium bowl whisk flour, baking powder and salt together. Add flour mixture and buttermilk to the butter mixture and stir until just combined. Last but not least fold in the berries and chocolate chips.
- Spread the batter into the pan, sprinkle with 1 tablespoon brown sugar. Bake for 40 minutes then remove it from the oven and let it cool for 30 minutes before serving.
