Chocolate Avocado Muffins
- 6 Tablespoons Ground Flaxseed
- 1 cup Water
- 2 whole Avocados
- 1/3 cups Margarine, Melted
- 2 teaspoons Vanilla Extract
- 1/2 cups Brown Sugar
- 1-1/2 cup Oat Flour (See Note)
- 1/4 cups Cocoa Powder
- 1 teaspoon Baking Soda
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/2 cups Chocolate Chips (optional)
- 1. In a large bowl, whisk together flax seed and water until it is jellied. Add avocado and mash with a masher. Blend in margarine, vanilla and brown sugar. Add all other ingredients to the mix, stirring until incorporated.
- 2. Fill 10-12 muffin cups, 3/4 high. Bake in a 350F oven for 15 minutes. Enjoy!
- Note: For the oat flour, add 1 1/2 cups of oats to a blender and blend until fine.
