Stuffed Pita
- 2 (6-inch) whole wheat pita bread rounds
- vegetable cooking spray
- 1 Tbsp. diced onion
- 1 Tbsp. diced green pepper
- 1/4 c. diced lean cooked ham
- 2 eggs, beaten
- 1/2 c. (2 oz.) shredded low-fat Swiss cheese
- 8 tomato slices
- Cut pita bread in half. Seal in aluminum foil and heat in oven at 350u0b0 for 5 minutes. Remove from oven and keep warm.
- Coat a nonstick skillet with cooking spray.
- Place over medium-high heat until hot.
- Add onion and green pepper; saute until vegetables are tender. Stir in ham and cook until thoroughly heated. Add eggs and cook, stirring frequently, until eggs are set.
- Stir in shredded Swiss cheese; remove from heat.
- Place 2 tomato slices inside each pita half. Fill with 1/4 cup egg mixture.
