Stephie’S Monster Cookies!
- 1 cup Unsalted Butter
- 1-1/2 cup Brown Sugar, Packed
- 1/4 cups Granulated White Sugar
- 1 Tablespoon Pure Vanilla Extract
- 2 whole Eggs At Room Temperature
- 1 whole Egg Yolk
- 2-1/2 cups All Purpose White Flour
- 3/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1-1/4 cup Semi-Sweet Chocolate Chips
- 1 cup Semi Sweet Chocolate Bar, Chopped
- 1-1/4 cup Mini M&Ms (for Baking)
- Preheat oven to 350F.
- Stack 2 baking sheets, one on top of the other. Line the top baking sheet with parchment paper. Arrange oven to 3rd shelf position.
- In mixer:
- Cream butter with both sugars until well blended. Add vanilla, eggs, and egg yolk. Mix.
- In another bowl, mix flour, baking soda and salt together.
- Fold the dry mixture in with the butter mixture. Batter will be thick. Now FOLD in chocolate chips, chopped chocolate and M & M's. IT WON'T BE EASY, but continue to fold together until mixed.
- (If batter is too soft and greasy add 2-4 tablespoons of flour. I don't usually have to do this.)
- Scoop out 7-8 ounces or 1 FULL CUP of dough! You can bake only 2 per baking sheet. They spread, so don't put them close together.
- Bake for 20-24 minutes. Insert a toothpick into the center to make sure it's done. Don't overcook.
- Remove from oven and let cook ON BAKING SHEET for 15-20 minutes!
- Now, didn't I tell you you could stop after only 1 cookie!?
