Lark’S Banana Whoopie Pies
- 1-1/2 stick Margarine
- 1-1/2 cup Sugar
- 1-1/2 cup Brown Sugar
- 3 whole Eggs
- 1 teaspoon Vanilla
- 6 cups Flour
- 1-1/2 teaspoon Baking Powder
- 1-1/2 teaspoon Baking Soda
- 1-1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1-1/2 cup Sour Cream
- 4 whole Ripe Bananas
- 1 container Cream Cheese Frosting, 16 Ounce, Or Your Favorite Recipe
- Preheat oven 350F.
- In a mixing bowl cream together margarine, sugar and brown sugar. Add eggs and vanilla.
- Sift all dry ingredients together and set aside.
- Mash the bananas using a fork. Add the sour cream to the mashed bananas. Stir together.
- Pour sour cream mixture in with the creamed sugar, beat together on low for 2 minutes. The mixture will be very thin. Add half of the dry ingredients, mix well. Put in last of the dry mixture. Beat until well mixed. The batter should resemble a muffin batter.
- Using a cookie scoop, place 9 cookies to a parchment lined cookie sheet. Bake for 14 minutes. When done, the edges should be golden brown. Let the cookies cool for about a minute, then take off sheet. (This will make it so the cookies wont "tear" off the paper. This is a very moist cookie.)
- Make a sandwich by filling with a Cream cheese frosting.
- I wrap them in individual pieces of plastic wrap, to keep them soft. But either way they never stay around long enough to matter.
