Chicken Parmigiana

  1. Pound chicken breasts on cutting board until 1/4 inch thick. Combine eggs and salt and pepper.
  2. Dip breasts into egg mixture, then into bread crumbs to coat.
  3. Brown both sides of chicken in the oil.
  4. In a saucepan, stir together tomato sauce, basil and garlic powder, and heat to boiling; simmer 10 minutes, or until thickened.
  5. Stir in butter.
  6. Put chicken in a 9 x 13 inch pan and cover with the sauce.
  7. Sprinkle with Parmesan cheese and cover. Bake at 350u0b0 for 30 minutes; uncover.
  8. Place mozzarella triangles over chicken and bake 10 minutes longer, or until cheese melts. Serve.
