Delicious Fresh Orange Cake
- 1 medium orange, cut into chunks (unpeeled)
- 1 c. plus 2 Tbsp. water
- 2 eggs
- 1 pkg. yellow cake mix
- 1 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/4 c. butter or margarine
- 1 (3 1/2 oz.) can flaked coconut
- 1 pkg. fluffy white frosting mix
- 2 c. all-purpose flour
- 2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2/3 c. butter, softened
- 1 c. granulated sugar
- 3 large eggs
- 2/3 c. milk
- 3 medium carrots, grated
- 1/2 c. coarsely chopped walnuts (about 2 oz.)
- A nut-sprinkled cream cheese icing is the perfect foil for this moist, not-too-sweet carrot cake.
