Plum-Filled Breakfast Bars
- FOR THE CRUST:
- 3/4 cups Butter, Melted
- 1/2 cups Chopped Walnuts Or Almonds
- 1-1/4 cup Flour
- 1 cup Brown Sugar
- 1-1/4 cup Rolled Oats
- 3/4 teaspoons Salt
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- FOR THE FILLING:
- 1/4 cups Sugar
- 1/2 teaspoons Cinnamon
- 2 Tablespoons Flour
- 2 Tablespoons Butter, Melted And Cooled
- 1 whole Lemon, Zest And Juice
- 2 cups Diced Fresh Plums (approximately)
- Preheat oven to 350 F.
- For crust, combine butter, nuts, flour, brown sugar, oats, salt, baking powder and baking soda, stirring until crumbly. Reserve about 1 1/2 cups of the crust and set it aside. Press the rest into a greased 9x13 pan.
- Bake at 350 F for 12-15 minutes, until brown. Remove it from the oven and set aside.
- In a bowl, combine sugar, cinnamon, flour, butter, lemon zest and juice. Add diced fruit (you can leave the skins on the plums) and toss to coat.
- Pour fruit filling over baked crust. Top with reserved crust mixture. Bake at 350 F for 35-40 minutes, until brown. Then remove it from the oven and let it cool completely. Then cut into 24 bars.
