Chocolate Cookies
- FOR THE COOKIE:
- 1-1/4 cup Raisins
- 2 cups Brown Sugar
- 1-1/4 cup Shortening
- 2 whole Eggs
- 1 cup Buttermilk
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 2 teaspoons Vanilla
- 3-1/2 cups Flour
- 1/2 cups Cocoa

- FOR THE FROSTING:
- 3 cups Powdered Sugar
- 1 cube Butter
- 4 Tablespoons Cocoa
- 1 dash Sea Salt
- 1 teaspoon Vanilla
- 3 teaspoons Milk
- Cover the raisins with water and boil until water is gone. In the meantime, combine brown sugar and shortening. Add eggs and beat until fluffy. Add buttermilk, baking soda, baking powder, salt and vanilla. Blend well. Add flour and cocoa. Stir in raisins. If needed, add up to 1/2 cup additional flour. Bake 10-12 minutes at 375u0b0F. Cool and top with frosting.
- For the frosting, combine the frosting ingredients in a bowl until smooth. Add additional milk for spreadable consistency, if needed.
