Glazed Yogurt Cake

  1. Set oven at 350F.
  2. Butter your favorite loaf pan.
  3. Start by zesting your orange, put the zest aside and then juice your orange (it should give you more or less 3-4 tablespoons of juice) set aside.
  4. In a medium bowl mix your flour, baking powder and salt. Set aside.
  5. In a large bowl, using a whisk, mix your yogurt and your sugar (I do not use my mixer for this recipe, I just like the way the texture looks). Add your eggs one at a time, keep whisking until smooth. Add your orange zest and your almond extract, then whisk in your oil. Finally, add all of your flour mixture at once and gently mix until well incorporated - but do not overmix.
  6. Pour your batter into your buttered pan. Bake in the oven for 50-60 minutes. Let the cake rest in the pan for about 10 minutes before removing to a serving plate. Let the cake cool completely.
  7. When ready (once cake is cooled) mix your marmalade and 2 tablespoons of orange juice in a heavy pan. Heat over low heat and stir until hot and well combined. Using a baking brush paint your cake GENTLY with the glaze. I take my time doing this because I want the glaze to absorb well into the cake. Let the glaze cool completely and serve!
